Preparation:

Cook the Pasta: Boil the pasta in salted water until it reaches al dente consistency. Remember to save some pasta water before draining.

Prepare the Guanciale/Pancetta: While the pasta is cooking, sauté the guanciale or pancetta, in a pan until it turns crispy and releases its fat.

Mix the eggs and grated pecorino cheese in a bowl until they are well combined.

Next, add the pasta to the pan with the guanciale or pancetta ensuring that the pasta is well coated in the rendered fat. Take the pan off the heat.

Pour the egg and cheese mixture over the pasta quickly, tossing vigorously to form a creamy sauce. If it’s too thick, gradually add reserved pasta water until you reach your desired consistency.

Finish off with an amount of ground black pepper and more grated pecorino cheese if you wish.

For serving

Enjoy it while the pasta is hot and the sauce is creamy. Pasta Carbonara tastes best when freshly made, as reheating can make the sauce clumpy.

 Traditional Carbonara doesn’t contain cream, its creaminess comes from eggs and cheese alone.
