  • 2 tablespoons tomato paste
  • Optional: 2 tablespoons brandy or cognac
  • A bouquet garni (consisting of thyme sprig, bay leaf, and parsley stems tied together)
  • 8 ounces mushrooms, quartered
  • Butter (about two tablespoons)
  • Freshly chopped parsley for garnish

Instructions

Prepare the Chicken: Season the chicken pieces, with salt and pepper.

Cook the Bacon: In a pot, cook the bacon on heat until it’s nice and crispy. Use a spoon to take out the bacon and keep the fat in the pot.
